Does this paper also fit the EvZ journal?

Yes, it will fit the EvZ journal. Might appear smaller in the journal however. Not by much but it will fit.

Can I use a sharpie or will it bleed through the paper?

I used extra fine, fine (pro) and retractable sharpie, black ink - none bled through unless i left the pen on the paper.

Is this A6 sized paper?

It depends on which paper you choose from. The seller has buttons now so you can choose between A6 and A5 sized paper. Both sizes go to similar looking 6 rings planners/binders, but they are different sizes.
