Something’s missing
Overall. good news accurate review. Some cuisines are completely overlooked though. Nothing about the Greek diner, the Jewish restaurant or any deli at all. Nothing Bout the American South.Especially missing is more detail about the diner, the customer. Why do we eat in certain places and not others? What tastes right and wrong?And personally I would have liked to hear more about race, gender and class in restaurants. I started my career working in food and beverage and, imo, the structure of the restaurant’s organization closely mirrors the rest of society.

Unexciting
I tried to read this book several times, choosing different chapters in hopes of being interested. It was slow and filled with too much boring detail.
